happy day?

glorious weather...great healthy food...playing ball with my little goofball...living with and knowing the love of my life...hmmm...yah, i'd say happy day...and there isn't one aspect of my life that i would even consider changing...

i watched the "christian the lion" video today...and man...can we just say niagara falls?! i couldn't stop crying...what an amazing story. animals are wondrous creatures...i don't care what anyone says, they have just as much compassion, love and intelligence as we do...maybe more? i know that when i walk through the door, no one has ever been happier to see me than my jackson...not even my mother! thanks lauren for posting the video...i really needed to see that this morning...i needed a good niagara falls cry...

today i went shopping for the ingredients i need to make the "moonie pies"...pretty extensive list of ingredients, but i am beyond excited to try them out...i am going to make two new flavours (i can't tell you what they are yet, i will be posting my contest entry by the weekend), and if they turn out...and someone is interested, well perhaps, ummm, i can send you both flavours by mail? let me know if you wanna try 'em...i'm going to serve some for easter...and next week is this girl's birthday, and even though i'm dreading the number and the day...i am going to deserve a treat...and why not have a raw vegan birthday moonie pie?

ok...so, i wanna run something by all of you...my easter menu...i am thinking about making white bean bruschetta, a vegan borscht, and either a lentil loaf or a spinach mushroom zucchini lasagna (spelt or brown rice noodles)? so what do you all think? lentil loaf or lasagna? i will eat these things on both good friday...and easter sunday...

some more randomness...i'm thinking of getting a tattoo next week...i want to get inked somewhere on my wrist or on the inside of my forearm...i want a line of my favourite poem, written by e.e. cummings "i carry your heart with me (i carry it in my heart)"...and i want it to be inked in john's hand writing...i've wanted this tattoo for a couple of years now...but a few things are stopping me...i don't know what to do...

moving forward...my eats today...they were pretty amazing...

breakfast was papaya and a slice of manna bread (brown rice and millet) with some peanut butter...no photo sorry, i ate it...and totally forgot...

lunch was an amazing salad...it was a spin on "the gena divine"...this one had mixed greens, grated beets (raw), hemp seeds, avo...and kraut...oh yum! i also picked up an organic "gilly juice" from a new place i discovered on the danforth, gimme a squeeze...i don't remember everything that went into this baby...kale, pineapple, lemon, chicory, cucumber, ginger...and a lot more...i'll make sure to post all the ingredients next time...it was out of this world, amazing...all you local peeps, check it out...their menu is pretty extensive and it's organic and so cheap!!!







and for dinner, i had another pizza...couldn't help it...very different from last night, and so delicious...i spread some spicy sabras hummus on the pita (multigrain)...on top of the hummus i spread some of my mom's tomato sauce...i layered some zucchini, mushrooms and red onions, put it in the oven for about 10 mins at 400 degrees...i then sprinkled some daiya cheese on top, put it back in the oven until the cheese was gooey and melted...and voila...a perfect pie...it was really good. hummus makes pizza. it really does...

  2. I'm totally with you on the Christian video...it gets me every time. So glad I could provide you with a niagara falls cry! As long as its the good kind of cry, of course.

    The tattoo idea sounds beautiful. I love the quote. I've been meaning to get a specific tattoo on the top of my foot for years now, but I've always chickened out because of the pain. Im sure I'll do it eventually though.

    Your eats look amazing...definitely want to check out that place on the Danforth! Sounds healthy and delicious.

  3. OMG I love tattoos and have a smattering of smallish ones and an armband around my right bicep but always want more. I go thru phases where i really want something and then it fades. I would like to get a large piece on my arm, possibly a quarter sleeve but have no idea what i want to put in it. I think you should GO FOR IT! if you've wanted it for a couple yrs and havent changed your mind, then it's totally the right thing...do it and let the work chips fall where they may so to speak :)

    Religion, veganism, meat eating/pain free, all the lovely comments the past few days..awesome and thank u for being such a great friend!

  4. danielle: yes come over!!!! i'm going to end up preparing TOO much food and no one but me will eat it...haha!!!! it would be nice to have someone that actually appreciates my cooking, it would be AMAZING and so much fun!!! so come on over!!!! =)

    nice tattoo idea. i've never been inked though i like tattoos on other people. too permanent and painful for this girl!

    i'm thankful for my loved ones, especially my bloggie friends. flowers, fruits, veggies, nature, animals, john, and children make me happy.=)
