on the eve of 34...

so in the last few days, i haven't posted...i've been crazy busy enjoying the sunshine and life...i've been reading and commenting of course...always eager to keep up with your lives...it's definitely one of my sweet pleasures...

this weekend i was finally able to purchase young coconuts...i did a happy dance in the isle when i laid eyes on those beauties...i bought 5...john's dad cracked one open for me...and i drank the water like it was holy...(maybe not the best comparison)...it was nice...very nutty...it was completely different from the coconut water i buy in the tetra packs...and different from the coconut water i drank straight from a very green young coconut i had at the veggie fair i went to last year...it was still pretty damn good though...

i took a picture of some of the meat i was able to extract, i've been snacking on it, and it's definitely delightful...i left some for john's dad...he broke one of his good knives cracking the coconut open!!! i have 4 more to go...and i am pretty excited to make "nutella"...



i've also been feasting on my fave tostadas...and yesterday i forgot to bring a long my sprouted corn tortillas, sooooooooo...i made a tostada salad, minus, the ummmm...tostada...



and last night, i made stuffed mushrooms...

stuffed mushrooms

6 portobello mushrooms (stems needed)
3 cups of organic baby spinach
1 plum tomato chopped
1 garlic clove (optional)
1 tablespoon nooch
pinch of salt
daiya cheese (optional)

place stems of mushrooms, baby spinach, tomato, garlic, nooch and salt in a food processor and process until smooth...fill each mushroom with filling, sprinkle with cheese if using...and place in 350 degree oven for about 10 mins...
