pasta primavera and a lunch date...(day 1 = success)

i've been feeding one of my best friends vegan meals...she's always eager to try anything i offer her...so tomorrow her and i will be dining on pasta primavera...raw vegan yumminess...this post started it all...i made a few changes...i didn't have any baby tomatoes...and my girlie girl does not like parsley...the alfredo sauce was pretty easy and simple to put together, i also added some nutmeg...my aunt use to put nutmeg in her cream sauces and they were to die for, so i thought why not...so for the pasta melange and veggies i added:

marinated zucchini and asparagus
carrots
eggplant bacon
sun dried tomatoes
basil
(i was upset to realize that i didn't have frozen peas, olives and mushrooms, i was really looking forward to adding those ingredients)

something quite fabulous happened today...i finally found a yoga studio, steps from my office...that means this girl is going to be doing yoga classes starting next week...hot yoga...and i'll either do a morning class...or a lunch class...totally and utterly excited...

finally finished dipping the cookies i made earlier this week in heathy's dark chocolate...and as soon as the rawnola is ready, i am ready to send off the goods to my moonie pie exchange friendling...(someone actually guessed right today)...but my lips are sealed...i should be getting her package tomorrow...but i will not blog about it until after she receives the package i send to her!!! pretty exciting stuff...

here are pictures of what i have been up to in my kitchie kitch (matthew kenney's raspberry vanilla rawnola...and eggplant bacon...and dark chocolate to dip the thin mints i made at the beginning of the week...and my nutella's hazelnut delight macaroons...

    The thin mints and the raw-nola, and the e'plant bacon (which i have heard from ppl who've made the recipe it's super authentic...i will never make it b/c i hate bacon..ha!) but all this chocolate...i am drooling!

  8. WHOA! This post is intense. That pasta looks fantastic, so hearty and creamy. Lovely! But the star of the show - chocolate covered cookies! YUMMY! Wait, actually, the eggplant bacon...no, the cookies, no the bacon...too much deliciousness!

    and thanks i am SO proud of myself...i totally did it! john always leaves me some, because i've been trying for quite a while...and yesterday was the first time i saw them...and said "no"...i feel pretty strong today!

    That's awesome you found a yoga studio so close...score! I'm embarassed to say that I've never taken a yoga class...I know, I know. It's time:)

It's great to have friends and/or family members who are willing and open to trying this yummilicious food. Looking at it I don't see how anyone could resist!

  13. hihorosie...i love it when someone tries the food i make...and loves it! it warms my heart...my friend actually ended up warming it up in the microwave, which is totally cool! at least she's eaten vegan 2 times this week during lunch!
