i'm back...and i'm having a love affair with garlic...

hi friends...hope this finds you all very well and full of joy...i am back from my week long vacation...and i am more than relaxed and happy...we had so much fun...(jackson, john and moi)...we were so lucky to be graced with nothing but sunshine the entire week (except friday, i thought winter was back to haunt me)...my vacation was definitely action packed...i golfed (and i golfed well)...i rode on the back of a jet ski...and tipped both john and i into the lake (which was so much fun)...i swam...i danced and sang to the mama mia soundtrack...(on my list of things to buy this week)...i visited an amazing local health store with so many vegan options...that totally made my day in itself...and again i have to mention, i am so blessed to be able to spend time away with family...and even more blessed to have been graced by the warmth of the sun each and every day...and, i have to say for the record, jackson is the world's greatest pup...i am so utterly proud of my fur baby, he was just so incredibly well behaved...and he is such a fish...he and i swam together and it was such a fun fun time...











i was slightly busy in my kitchen today...i made two very yummy dishes...

a shaved root vegetable salad, inspiration for this recipe came from the canadian food network, by the lovely laura calder (i used a veggie peeler, i don't have a mandolin)...



in this lovely salad are the following ingredients:

baby fennel
striped beets
golden beets
yellow zucchini
radishes
asparagus
pea shoots
parsley
thyme
dill

for the dressing:

olive oil
lemon zest
juice of a lemon
apple cider vinegar
himalayan crystal salt

one word: beautiful

i also made a very lovely baby arugula basil pesto (baby arugula, basil, parsley, LOTS of garlic, walnuts, himalayan crystal salt and olive oil)



i enjoyed this lovely sauce on toasted organic spelt bread with wild rice, and on some brown rice rotini...

one word: garlickyheaven (haha!)

i love garlic...i put it on everything, in everything...i've turned into one of those stinky people on the subway i always complain about...but i don't care...a lot of people dislike it...and it's gotten such a bad rep! well i'm here to bring garlic back!!! not really...i'm getting a little carried away, as per usual.

  4. I love that you named your dog after a Johnny Cash song. (It's a great song, too). And, I relate to the garlic. I reek every freaking day! Can't get enough of pesto. That jar of pesto you made reminded me I'm out again. Sounds like a great combo you put in there. YUM!

  6. mmm! i've been meaning to make basil pesto for a WHILE now. good thing i got fresh basil yesterday. good thing you reminded me.

    nelly - i love your attitude towards life. just reading your post about how you feel blessed to have time off with family makes me feel at peace!

    Thanks for your comments on my blog- it seems that over here in the UK we're not so worried about protein. Calcium seems to be peoples biggest issue with veganism or giving up dairy. I agree with you- dairy turns my stomach and luckily tom doesn't drink much of it (only in tea and coffee)

  10. Looks like a great vacation! So glad you are well rested and revived! I just love that! :) Yummy recipes, I am big garlic fan too, but I can't eat it raw..don't ask me why, it just bothers my tum! Anyway, have a great day! XO

  12. Vacation looks so wonderful! I can just smell the fresh air! And jet skiing is fun! Glad to hear you all had a good time (Jackson included). Salad looks beautiful and for the record: I heart garlic. And onions too. Love those stinky things! Mmmm! I know some people find it too harsh or whatever but I always say bring it on! :)

    As for your kitchie delights...yum! That shaved beet salad and pesto sound amazing. I really want to make pesto this year..and my work garden has tons of arugula which is perfect!
    Ps I love garlic too...and so people beware lol!

    Oh hell yes! Garlic is amazing stuff- tasty, medicinal, keep vampires away, and when used in larger quantities is spicy. Gotta love it.

    Have you ever juiced garlic? I'm telling you- put it in a green juice with lemon, apples, celery, kale, beets, whatever- honestly it's SO GOOD- and yes, when I juice garlic, I'm that stinky person too! :)

    p.s. that salad looks awesome- I have almost every ingredient in my fridge right now- guess what i'm having for dinner?!

  16. Welcome back Nelly! I'm so happy you had a good time lovely.
    I love cottages...my grandparents had a cottage when I was a little kid and I loved spending time there in the summer. It was so relaxing and it gave me a great appreciation for nature that I carry with me to this day.
    As for garlic, I think it is seriously underrated. I don't care about the smell. I love garlic! Unlike one of my friends, I do believe that there is such a thing as too much garlic...I've tasted something that was way overpowered with garlic! But just the right amount= perfection! Or garlickyheaven. haha
